The main use for lima beans are mixed vegetables. The USDA requires the canning companies to have a certain lima bean count per can to allow it to be labeled as mixed vegetables.
HBI contracts with area Growers to use their land to plant the lima beans. HBI scouts the fields, and harvest the lima bean fields like peas (with the same combines) The main difference is that they are a 90 day crop compared to peas which are a 60 day crop. Currently they are grown in Sturgeon Bay.
